EASY Red Curry Stir Fry

Let's face it, being a mama and makin dinner can be a challenge so that's why I love a good stir fry!

I honestly just grabbed everything in my fridge that was going to go bad soon and chopped it up. I also cooked quinoa and cauliflower rice because I don't know that my husband really considers cauliflower "rice", so I add quinoa for bulk and extra protein. 

Here's what I did and what I used:

Ingridents:

  • 1 red bell pepper
  • 1 small purple sweet potato
  • 1 small regular sweet potato
  • 1/2 yellow onion
  • 1/2 package of mushrooms 
  • 1/2 package of tempeh
  • Red Curry Sauce from Trader Joe's 
  • 1 cup quinoa
  • 2 cups cauliflower rice (I buy it in a bag from Trader Joe's)

Directions:

In a separate pot cook quinoa according to directions on package. In a large wok I cook the sweet potato first in a little extra virgin olive oil, once that is tender I throw in all the veggies and cauliflower rice. Then I add 1/2 bottle of curry sauce and stir. I continue to cook for 10-12 minutes or until veggies appear to be steamed or tender. As the last step I throw in the cooked quinoa and stir it all together. You can add extra curry sauce to taste. Serve and enjoy!
