Hello!! How was your weekend? We attended a 2 year old birthday party and had a brunch with Santa. Needless to say Jack is scared shitless of Santa so hopefully threatening with Santa not coming with presents will still work in his later years. However Jack was so cute playing in the bounce house and interacting with the other little kids. Our entire family also had a plad moment, but couldn’t seem to get Jack still enough for a good photo.
So while on the topic of brunching with Santa I had to bring a dish to the party and so I went with my go-to recipe, quinoa chickpea salad.
This salad is like crazy easy to make and it’s packed with plant protein. It’s a great salad to make a big batch of and have throughout the week, and to bring to potlucks.
Let’s get right into it shall we?!
- 1 cup uncooked quinoa
- 1 handful chopped sun dried tomatoes
- 1/4 cup chopped red onion
- 1/4 cup (maybe a tad less) chopped basil
- 1 cup rinsed chickpeas
- fresh lemon
- salt and pepper
Cook quinoa according to package, once cooked mix in bowl with other ingredients and the juice of a fresh lemon, salt and pepper to taste! Serve cold.
