Cauliflower Crust Pizza

Hey there, so I feel like I am jumping on the cauliflower pizza crust train a little late but boy am I glad I did. The pizza crust from Trader Joe’s is so good! I LOVE that there is an awesome vegan option like this for pizza crust.

It has been crazy hot here in southern California and the last thing Stefan and I feel like doing is turning the oven on, but I had to look him in the face and say, “we have to do it, I need to eat that damn crust”. So graciously I put him in charge while I sat in front of the fan sipping chardonnay. That lasted for about 3 minutes before the control freak in me went to check on him in the kitchen… I decided I’d help, just a little.

I love making our own pizza because the options are endless! What I went with last night was heirloom tomato, red onion, basil, bell pepper, tofu, and a little bit of butternut squash.

We just use a basic red pasta sauce out of the jar for our pizzas. I love the tomato basil sauce from Trader Joe's and it's only like $2.

Let's get right into the recipe shall we.

Here's what you’ll need:

  • 1 medium heirloom tomato chopped
  • ½ cup chopped butternut squash chopped
  • 4 basil leaves
  • ½ package of tofu, crumbled
  • ¼ cup chopped red onion
  • ½ red bell pepper chopped
  • ⅓ cup fav red sauce

Directions:

  1. Cook cauliflower crust according to package, the crust we bought needed to be cooked on each side for 10 minutes.

  2. WhileThe crust is cooking I sauté all of the ingredients except the basil. You want to brown the tofu up since you will only bake the pizza for five minutes in the oven when you add the toppings.

  3. Once the crust has baked for 10-12 minutes on each side, pull the crust out of oven and add sauce then toppings, and lay basil leaves on top. Place pizza in oven and cook for 5 minutes.

  4. Remove pizza, cut, and serve!
