Vegan Gluten-Free Peanut Butter & Jelly Donuts

Hey mama how are you? As I sit down to write this Stefan is giving Jack a bath and putting him to bed, while I sit at the kitchen table with a cold glass of Chardonnay and my oil diffuser going. Today was just one of those days that I just didn’t feel like moming. Around 3pm I found myself staring at the clock thinking “is it bedtime yet?”. I hate that feeling, I really do because I try to make it a point to savor every moment with Jack and be as present as I can be, but today was just one of those days. I just wanted to lay down and close my eyes and not have to answer to anyone.

Do you ever have those days?

I have just been feeling super tired lately and I think I need to possibly cut my Chardonnay at the end of the day… wait is that crazy?! I really do though. Don’t you notice when you haven’t had your “mommy juice” you feel so much more energized the next day? It’s just after a long day of running around after Jack I want to relax with a glass of wine. But I’m gonna try.

We did a beach day on Saturday which was so much fun, I just love watching Jack fearlessly run into the waves. I on the other hand am in full helicopter mom mode right behind him picking him up constantly so he doesn’t get knocked down. Later Saturday evening Stefan and I had 2 glasses of wine and decided to paint our living room white. Like wtf, we have a HUGE living room and this mama is tired after 9:30pm, so let’s just say it’s turned into a now 2 day going on 3 day project (insert eye roll emoji).

What I do love about my husband is that he is just like me when it comes to wanting something done immediately, and he loves a good project to do. So stay tuned for my new walls, I know you’re waiting on the edge of your seat.

Anyways I know this post is supposed to be about donuts and I swear we are getting there!

And… WE’RE HERE!

These donuts are nothing to F- with because they are rich, and usually I can easily take down 2-3 donuts in a sitting no prob, but these are a work in progress to the end, but so yummy every step of the way.

I fucking love donuts, they are my can’t live without food. I used to stop by the Whole Foods by my doctor’s office after I did my weekly check ups when I was pregnant and get their vegan donuts. I’d buy 3, a half of one would make it home, a gift for my husband.

We are big peanut butter and jelly fans in this house so I wanted to incorporate that into a donut! I’ve recently gotten some requests for gluten free recipes and these are both gluten free and vegan!

Let’s get to it shall we.

Ingredients:

  • ⅓ cup coconut oil melted
  • 2 tablespoons maple syrup

  • 1 large banana mashed

  • 1 teaspoon vanilla extract

  • ¾ cup creamy peanut butter

  • 4 tablespoons (24g) coconut flour

  • 1 teaspoon baking powder

  • ⅛ teaspoon sea salt

For the PB&J topping:

  • 6 tbsp raspberry jelly

  • 2 tbsp coconut oil

  • 2 tbsp peanut butter

Directions:

  1. Preheat oven to 350ºF. Spray donut pan with coconut oil baking spray or use vegan butter to lube it up!

  2. In a medium bowl stir together coconut oil, maple syrup, banana, peanut butter, and vanilla extract. Then add coconut flour baking powder and salt, stir until combined and let it sit for 3-4 minutes to make sure the coconut flour absorbs.

  3. Fill your donut tray with batter.

  4. Bake for 10 minutes.

  5. Once donuts are done and cooled then take a knife or spoon and “frost” the tops with your raspberry jelly.

  6. In a separate bowl mix your coconut oil and peanut butter to make the glaze.

  7. Once donuts are frosted with jelly take a fork and whisk it in the peanut butter glaze and then drizzle over the tops of the donuts.
