Quick Vegan Lunch Idea
I don't know about you but I am all about making something quick and easy these days especially with a toddler running around. This lunch idea can easily be a dinner option as well. I almost exclusively shop at Trader Joe's for our little family so all of these items are from there, but if you don't have a Trader Joe's next to you, you can pick them up at your local grocery store.
Plus did you know that kale is high in iron, loaded with antioxidants, and is a great anti inflammatory food. Lentils are also packed with plant protein and fiber. Together these two powerhouses make for a super (complete) nutritious meal.
Here's what you need:
- 1 package pre cooked lentils
- 1 jar of bruschetta
- 2 cups kale
- 1 clove garlic, minced
- sea salt
Place cooked lentil in a bowl and add the entire jar of bruschetta and mix together. You can keep what you don't eat in the fridge for later.
In a medium pan heat 1-2 tbsp of olive oil with 1 clove of minced garlic. Add in your chopped kale and sea salt, stirring frequently. Cook the kale for about 5-7 minutes until it is slightly wilted and bright green in color.
Add a scoop of lentils and your cooked kale to a plate and you are ready to eat! For a little twist you can squeeze half of a fresh lemon on your kale.
