Lazy Girl Chopped Salad

Hey hey! I don’t know about you but I’m so ready to have a little detox happen in my life. After eating all the Christmas cookies and indulging in wine and cocktails I think my body has had enough.

I like to set goals that I know I will stick to, so instead of getting crazy and quitting wine for all of January I’m just going to have it on the weekends (pray for me). I want to start eating more salads and get back to eating nourishing foods.

Even though we eat plant-based there’s still some junky food out there or the local Thai delivery place lol! 

This salad is easy to make and PACKED with the most nourishing ingredients. 

Literally all you need is a food processor and you’re in business! 

Lets get to it. 

 

Ingredients: 

  • 4 cups chopped Tuscan kale
  • 2 cups broccoli  
  • 2 cups chopped  Brussels sprouts 
  • 1 cup chopped carrots 
  • 1/2 cup almonds  
  • 2 tbsp sunflower seeds  
  • sesame soy ginger vinaigrette dresseing from Trader Joe’s (dressing contains honey)

Directions: 

Place all ingredients except the sunflower seeds and dressing into the food processor and chop until ingredients become shredded. You don’t want to liquify the salad so pulse the chop button. *You may need to do small batches in the food processor depending on the size of your processor.

Transfer your chopped salad to a bowl and toss in your 2 tbsp of sunflower seeds and add dressing to your taste.
