Yay they’re HERE! Pumpkin chocolate chip cookies! Honestly these are the most moist cookies I’ve ever made!
I have been in a nonstop baking mood lately since we got home from Austin, which you can read all about HERE.
Ok let’s get right to that recipe girl because I have received so many messages on Instagram asking for it!
½ cup organic pumpkin (not pumpkin pie filling)
½ cup coconut sugar
¼ cup vegetable oil (I used avocado)
1 tbsp applesauce (I literally opened one of Jack’s pouches)
1 cup of flour
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 tsp of pumpkin spice seasoning
½ tbsp vanilla
1 cup vegan chocolate chips
Preheat oven to 350. Combine sugar, oil, pumpkin, applesauce, and vanilla in a medium bowl and whisk together.
In a small bowl combine flour, salt, pumpkin pie spice, vanilla, baking powder and baking soda.
Add the flour mixture to the pumpkin mixture and combine, then add on your chocolate chips and stir.
LET dough sit on counter in bowl for 10 minutes before you plop on your cookie sheet.
Bake 10 minutes!
