I got this recipe from my fellow vegan babe Alicia Silverstone and it's delicious! I think next time I may use cold brew instead of coffee I made at home just to spice things up a bit! Anyways, these brownies are melt in your mouth delicious!
What you'll need:
- 3/4 cup whole wheat pastry flour
- 3/4 cup whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup of coconut sugar
- 3/4 cup of unsweetened coconut milk
- 3/4 cup brewed coffee
- 1/2 cup coconut oil
- 1/2 cup chopped walnuts
For the glaze:
1 1/2 cups of vegan chocolate chips
1/2 cup of Earth Balance Coconut Spread
Preheat oven to 325. Oil 9 inch baking pan ( with coconut oil)
Sift together the flours, cocoa powder, baking powder, baking soda, and salt in a large bowl. Stir in the coconut sugar.
In a separate bowl , stir together the milk, coffee, and oil. Add the wet ingredients to the dry ingredients, and stir to mix well. Stir in the walnuts.
Pour the batter into the prepared pan, and bake 25-30 mins. Place pan on cooling rack for about 20 minutes.
Once brownies have cooled, prepare the glaze. I literally took a huge coffee mug and put the coconut butter and chocolate chips in there and microwaved it for 30-40 seconds. I then stirred it up quickly. Then pour the glaze over the brownies and let it sit in the fridge for 1 hour. THEN EAT THEM!!! See if you can have only one... You're welcome!
